Kung Pao Chicken: The Ultimate Sweet, Savory, and Spicy Stir-Fry

If you are looking to bring restaurant-quality Asian flavors right into your home kitchen, Kung Pao Chicken is an absolute must-have. Originating from the Sichuan province of China, this iconic stir-fry combines tender, juicy chicken pieces, crunchy roasted peanuts, crisp vegetables, and dried red chilies—all tossed in a bold, savory, sweet, and tangy sauce.

It strikes the perfect balance between heat, crunch, and deep umami flavor, making it one of the most popular chicken dishes worldwide.

Ingredients

For the Chicken & Marinade:

  • Chicken Breast or Thighs: 500g (cut into bite-sized 1-inch cubes)
  • Soy Sauce: 1 tablespoon
  • Shaoxing Wine or Rice Vinegar: 1 tablespoon
  • Cornstarch: 1 tablespoon (locks in the moisture so the chicken stays tender)
  • Sesame Oil: 1 teaspoon

For the Signature Kung Pao Sauce:

  • Soy Sauce: 2 tablespoons
  • Dark Soy Sauce: 1 tablespoon (for rich color and depth)
  • Chinkiang Vinegar (or Balsamic/Rice Vinegar): 1.5 tablespoons
  • Hoisin Sauce: 1 tablespoon
  • Brown Sugar or Honey: 1.5 tablespoons
  • Cornstarch: 1 teaspoon (whisked with 2 tablespoons of water to thicken)

For the Stir-Fry:

  • Vegetable Oil: 2 tablespoons
  • Unsalted Roasted Peanuts: 1/2 cup
  • Dried Red Chilies: 8–10 whole (cut in half, seeds removed for less heat)
  • Sichuan Peppercorns: 1 teaspoon (optional, for that signature subtle numbing kick)
  • Garlic: 3 cloves, minced
  • Fresh Ginger: 1 tablespoon, finely minced
  • Green Onions (Scallions): 4 stalks (cut into 1-inch pieces)
  • Red and Green Bell Peppers: 1 medium (diced into cubes)

Step-by-Step Instructions

Step 1: Marinate the Chicken

  1. In a medium bowl, combine the diced chicken with soy sauce, rice vinegar, cornstarch, and sesame oil.
  2. Mix well to coat each piece evenly and set aside to marinate for 15 to 20 minutes.

Step 2: Mix the Sauce

  1. In a small bowl or measuring cup, whisk together the soy sauce, dark soy sauce, vinegar, hoisin sauce, brown sugar, and the cornstarch-water slurry.
  2. Set the sauce mixture next to your cooking station.

Step 3: Sear the Chicken

  1. Heat 1 tablespoon of vegetable oil in a wok or large heavy skillet over high heat until smoking hot.
  2. Add the marinated chicken pieces in a single layer. Stir-fry for 4 to 5 minutes until golden brown on the outside and cooked through.
  3. Remove the chicken from the wok and set it aside on a plate.

Step 4: Aromatics and Spices

  1. Wipe the wok lightly and add the remaining 1 tablespoon of oil over medium heat.
  2. Add the dried red chilies and Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant and slightly darkened (be careful not to burn the chilies).
  3. Add the minced garlic, ginger, and the white parts of the green onions. Stir-fry for another 30 seconds until aromatic.

Step 5: Toss Everything Together

  1. Turn the heat back up to high. Add the diced bell peppers and stir-fry for 1 minute so they stay crisp-tender.
  2. Return the cooked chicken to the wok and pour in the pre-mixed Kung Pao sauce.
  3. Toss continuously for 1 to 2 minutes until the sauce bubbles, thickens, and coats every piece of chicken and vegetable in a glossy glaze.
  4. Fold in the roasted peanuts and the remaining green onion greens. Give it one final toss and remove from heat immediately.

Serving Suggestion

Serve your Kung Pao Chicken piping hot over a bed of steamed jasmine rice or egg-fried rice to soak up all that rich, glossy sauce!
